Simple cuisine that finds inspiration in original flavors. That's the mantra of Walter Toro, a five-star chef who brings his dazzling skill to our restaurant El Moro.

Curiosity is one of Walter Toro's most distinctive traits. This sense of restlessness, the desire to learn about the world's different cultures and culinary styles, led him to pack his bags and work for five-star hotels in Spain and Italy. But perhaps more important than his work at these prestigious establishments was the exploring he did in the surrounding small towns, primarily in Italy, experiences that have lent his creations a signature stamp.

Meats, fish, pastas and national dishes, as well as original vegetable-based preparations, are just some of the dishes that Walter imbues with feeling and savoir-faire whenever he's in the kitchen.

Original Flavors

His time spent with Italian nonas allowed Walter to soak up all the native wisdom and ancestral culinary secrets of the region. He gained a respect for pure flavors and the proper use of fresh spices and seasonings, leading to a rich knowledge that is reflected in all his dishes.

A native of Tomé, near Concepción, Walter is the son of a German mother and was raised in part by a nanny with superlative culinary gifts. He grew up with a singular mix of recipes, techniques and tastes, both local and European in origin. In addition to his time spent in Europe, Walter has benefitted from a deep knowledge of Chile's culinary nooks and crannies. All of which has resulted in a creative, inspired style, marked by an inclination towards experimentation in the kitchen. "In Chile, we've never placed much importance on gastronomy as other Latin American countries have. Despite this, Chile's ingredients and products have a lot in common with the ingredients of Mediterranean cuisine. This helps achieve a high-quality cuisine, but one with a lot of originality in its flavors," he says.

Chef Toro's wealth of experience from his years at world-class dining establishments has taught him to have a connection to his preparations, so that they are truly one of a kind. "My cooking is simple, highly natural, and homemade, with quality flavors and precise preparations. My cuisine is very straightforward, inspired by the original flavors of the European countryside", he says.

Walter's personal spirit, defined by native techniques and international accents, has lent a depth to the haute cuisine style that characterizes El Moro Restaurant. According to the chef, the key lies in cooking with real feeling, so that diners are treated to a truly unforgettable experience.
